No red potatoes; no problem, serve it with pasta on the side.
Feeling more like a middle eastern dish; change the spices to 1 teaspoon coriander, 1 teaspoon turmeric, and leave everything else the same. Serve with rice or couscous.
or more of an asian tase?
Change the spices to a teaspoon of garlic, a half teaspoon of ginger and a tablespoon of soy sauce instead of salt. Serve with rice.
More vegies? add them in with the mushrooms.
